    Hacienda Altagracia Appoints Ramces Castillo As Executive Chef

    New Chef Celebrates Regional Flavors with Dishes Sourced from On-site Farm

    SAN ISIDRO, COSTA RICA (March 22, 2017)Hacienda AltaGracia, Auberge Resorts Collection’s first Central American property located in Costa Rica’s lush mountains of Pérez Zeledón, announces the appointment of Ramces Castillo as Executive Chef. In his new role Castillo will lead the culinary program for all of the resort’s dining outlets including its signature restaurant, Ambar. Pairing classical cooking techniques with the flavors of Latin America, Chef’s new menu will celebrate the bounty of the region and will be sourced from the resort’s on-site 20-acre sustainably managed farm. Making for an unforgettable Costa Rica dining experience!

    Chef Castillo will bring a distinct global perspective and command of Latin flavor profiles to Hacienda AltaGracia, building upon a culinary trajectory of more than 10 years that has included top positions in St. Lucia, Dominican Republic and Mexico. Chef’s remarkable dishes, using local ingredients and plated in an artistic manner, are a result of his skillful precision of Japanese knife skills and appreciations of the elegance and finesse of classic French cuisine.

    Cultivating the best ingredients for the kitchen from the on-site organic farm, Chef Castillo invites guests to dig in and accompany him in the selection of fresh produce each morning for the days’ dishes at Hacienda AltaGracia’s organic farm, La Huerta. For lunch, guests can experience the harvesting of fresh fruits, vegetables, and herbs immediately before they are prepared and served at an al fresco barbeque right onsite at the farm.

    Chef Castillo’s menus at the resort will be ever-changing and always reflective of the seasons. They will feature selections that incorporate the region’s best local produce and fresh ingredients with signature dishes such as Pan Seared Local White Trout with creamy watercress, wild berries, tapioca and lavender foam.

    Chef Castillo lives in Pérez Zeledón with his wife and three daughters.

    Auberge Resorts Collection Appoints Michele McConalogue Director of Sales and Marketing of Hacienda AltaGracia

    Auberge Resorts Collection, owner and operator of boutique luxury hotels, resorts, residences and private clubs, announced today that Michele McConalogue has been appointed Director of Sales and Marketing of Hacienda AltaGracia, a spa resort in Costa Rica. McConalogue, a respected hospitality executive with more than 25 years of strategic sales and marketing experience, will oversee all leisure, catering and Costa Rican event sales, for Hacienda AltaGracia, Auberge Resorts’ first Central American resort in Costa Rica.

    “We are excited to welcome Michele to lead our sales team, as she brings extensive experience and a proven track record in developing and directing marketing, sales and public relations programming that will make her a valuable addition,” said JP Alfonso, General Manager, Hacienda AltaGracia. “With Michele’s solid travel industry background and connections with top agents and tourism boards, she will be integral to the growth of our sales presence.”

    McConalogue joins Hacienda AltaGracia from Capella Marigot Bay Resort and Marina in Saint Lucia, where she was responsible for overseeing all aspects of the sales and marketing function for both the resort and the 42-berth marina.

    Prior to that, McConalogue oversaw all aspects of sales and marketing efforts for The Founders Inn and Spa in Virginia Beach, as director of sales and marketing where she developed and led a sales team that consistently exceeded goals, resulting in record occupancies and revenues during her tenure.

    Her previous luxury hospitality experience includes executive level positions at Lough Eske Castle, a Solis Hotel & Spa, Donegal, Ireland, Tower Hotel Group and Gresham Hotels.

    McConalogue received a Bachelor of Arts in Hotel and Tourism Management from the University of Ulster in Coleraine, Northern Ireland.

    Hacienda AltaGracia Appoints Victor Tafoya as Executive Chef

    New Chef Entices with Farm-to-Table Menu Inspired by American Continent

    The newly opened luxury spa resort in Costa Rica, located in the lush mountains of Pérez Zeledón and part of the esteemed Auberge Resorts Collection, announces Victor Tafoya as Executive Chef. In this new role at Hacienda AltaGracia, Tafoya will lead the culinary program for all of the resort’s Costa Rica dining outlets including its signature restaurant, Ambar. Drawing on the traditional methods of cooking and flavors of the Americas, dishes from Chef’s plant-driven menu will be sourced from neighboring farms, elevating your Costa Rica resort dining experience.

    Tafoya brings a well-rounded culinary background to Hacienda Alta Gracia. In his most recent position Chef Tafoya served as Executive Sous Chef at Rosewood Crescent Hotel in Dallas where he oversaw the Forbes Five-star resort’s three restaurants and banquet operations. He also previously held positions as Executive Sous Chef with Rosewood Little Dix Bay, British Virgin Islands, where he oversaw three restaurants and on- and off-site catering events; and as Chef de Cuisine at The Tides Sugar Beach, St. Lucia, West Indies. Drawing from nearby farms and artisanal fisheries, signature dishes include Pan Seared Corvina with cubace beans and tacacos and Fresh Heart of Palm Ceviche.

    Chef Tafoya lives in Pérez Zeledón with his wife and two daughters.

    Hacienda AltaGracia and Sansa Airlines Introduce Exclusive Flights Between San Jose and San Isidro Costa Rica

    Just in time for high season, guests will enjoy convenient 35-minute access to Costa Rica’s pristine hill country, national parks and southern coast

    SAN ISIDRO, COSTA RICA (December 14, 2015) – In response to the rising popularity of Costa Rica’s verdant Pérez Zeledón region as a tourist destination, Sansa Airlines, a local subsidiary of Latin American airline Avianca, will launch three weekly flights from San Jose International Airport to San Isidro airfield starting December 15, 2015. The new time-saving alternative will grant guests visiting our luxury resort in Costa Rica, Hacienda AltaGracia easy access to the natural attractions of the lush mountains of Pérez Zeledón.

    The new Sansa Airlines 35-minute southbound flight will be on a twice-daily schedule departing San Jose International Airport every Tuesday, Friday and Sunday at 7:55 a.m. and 1:00 p.m., with return flights from the San Isidro airfield departing at 8:40 a.m. and 1:45 p.m. on the same days. Sansa Airlines will be the first carrier to offer flights to the San Isidro region of Costa Rica.

(September 21, 2015) – Auberge Resorts Collection, owner and operator of boutique luxury hotels, resorts, residences and private clubs, announced today that Juan Paolo Alfonso has been appointed General Manager of our Costa Rica Resort, Hacienda AltaGracia. This intimate new resort located in the lush mountains of Pérez Zeledón in the southern region of Costa Rica opened in June 2015 and joined Auberge Resorts Collection in July 2015.

    At Hacienda AltaGracia, Alfonso will oversee the management and operations of Auberge’s first Central American boutique luxury resort, which is poised to bring a vibrant, new luxury experience to Costa Rica. Alfonso brings vast experience in luxury hospitality to this integral new role, having previously served most recently as Assistant General Manager of Amangiri in Canyon Point, Utah, where he was vital in the development of curated adventure, cultural and historical experiences in the region.

Alfonso formerly served as Front Office Manager for Amanyara in Turks and Caicos, where he worked closely with general managers and rooms operations managers opening the resort. He began his hospitality career with managerial positions at the lauded Amangani and Amanusa resorts.

    Alfonso holds a bachelor’s degree in management and communications from Ateneo de Manila University, Quezon City, Philippines and a Swiss Hotel Association Diploma in International Hotel Management and Le Cordon Bleu Diplome Culinaire D’Hotelier from the International College of Hotel Management, Adelaide, South Australia.
